Carrot Cake

1 cup cooking oil
1-½ cups white sugar
4 eggs
3 cups grated carrot
2 cups flour
2 tsp. Baking soda
½ tsp. Salt
2 tsp. Cinnamon
¾ cups chopped walnuts
1-cup raisins
* 2 ( 9 x 13″)

Preheat oven to 350 degrees. Beat cooking oil and sugar together in mixing bowl. Beat in eggs. Stir in carrot.

Add remaining ingredients. Fold in to moisten. Spread in greased 9 x 13″ pan. Bake in oven until an inserted wooden pick comes out clean, about 45 minutes. Spread with cream cheese icing when cool.

Cream Cheese Icing

8 oz. Cream cheese, softened
4 cups icing sugar
¼ cup margarine, softened
2 tsp. Vanilla

Put all ingredients into mixing bowl. Beat slowly at first to combine then beat at medium speed until light and fluffy. More or less icing sugar may be added as desired. Makes about 3 ½ cups.
